About the Author
Rosana Santos Calambichis is an entrepreneur, operator and author with more than two decades of experience across the foodservice industry.
Her professional foundation began in law, an education that shaped her approach to structure, analysis, and negotiation. She later completed an MBA in Global Business Management and transitioned into business brokerage, advising on the evaluation and acquisition of privately held companies. This work provided direct exposure to financial performance, operational realities, and the gap between how businesses appear and how they truly function.
That experience led naturally from observation to acquisition.
In 2003, together with Mano, she acquired BIG CHEF, a food manufacturing company serving the hospitality and foodservice industries in South Florida. The business expanded across manufacturing, private label, specialty food distribution, online retail, event catering, restaurant and bakery operations, inflight provisioning, and yacht service. This breadth of experience shaped a cross-sector perspective that few operators develop.
Across each stage of that journey, a consistent pattern emerged. The businesses that sustained growth were not always the most visible or the most creative. They were the ones built on solid operational foundations, clear cost structures, disciplined teams, and an honest understanding of their market position, along with the ability to adapt without losing their identity.
That observation became the foundation of The Food Business Blueprint.
She was honored with the noble titles of Commander of the Sublime Order Pumart Merit of Honor and as Commander Maracajaguacu in Brazil, distinctions that reflect the depth and range of her influence.
Rosana's contributions have been recognized both nationally and internationally.
